Happy St. Patricks Day!: Leftovers and sammiches

Good day folks!

St. Patrick's Day is this Sunday, while some of you will be celebrating it for the religious holiday, I think others will celebrate just for the feast!

While there are other traditional Irish foods that are served on this day, a lot of us will be preparing massive amounts of, corned beef and cabbage....


And guess what..a lot of us will have corned beef and cabbage for the following 2 days. I thought I would share a few leftover corned beef recipes that our family enjoys.

Corned Beef Hash with Eggs

Ingredients:
  • 1/2 cup minced onions
  • 1/4 cup cooked cabbage
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons butter
  • 3 cups cooked chopped corned beef
  • 2 cups diced cooked potatoes
  • 1/2 teaspoon pepper
  • salt and pepper to taste
  • eggs
Sauté onion and pepper in butter until tender. Mix with corned beef, potatoes, cabbage and salt/pepper to season. Fry/ mix until caramelized onions and browning on potatoes. Cook a few eggs to your preference and serve with a slice of toast.

Leftover Hot Corned Beef Sammiches:  yes..sammiches.
 
Ingredients:
  • rye bread
  • mayonnaise
  • Leftover corned beef
  • Leftover cabbage
  • Leftover Onions
  • Swiss cheese or provolone
 
Saute leftover onons, cabbage and cornedbeef in frying pan until carmelized. smear a small amount of mayonnaise on rye bread. Add browned cornedbeef mix to bread and slice of cheese. Throw a dab of butter back into the pan and sear sammich till lightly brown on both sides...mmmmm sammich!!

  1. mmmmmmm- that looks soooo yummy! My hubby can't stand corned beef and cabbage so I usually just get a little fix for myself at the local diner. The recipes for leftovers look so yummy too though :)

  5. Oh Boy, I'm going to have to order some of your corned beef and cabbage dinners for the O'Kenneys! Fr. Kevin is sure to serve some at the rectory, especially with his older brother, Patrick, in town!
